"Heta Murasaki Nasu" - Eggplants
These eggplants are indispensable in Kanazawa for making pickles or boiled dishes.
These eggplants are entirely purple, unlike normal eggplants where the stem is usually white. They are also somewhat smaller and sweeter than normal eggplants and have a thinner skin. They are perfect for making pickles. A common way to prepare them is by boiling them in soy sauce or by making salted pickles.
