"Iwagaki" - Rock Oyster
A wildly tasting oyster often caught in summer.
The Ishikawa Prefecture has many oysters that can be caught during the summer months. One of those oysters are rock oysters, which go by the popular name “summer oysters”.
They are usually caught in the Noto Region, but are also available in Kanazawa. They are bigger than the Japanese Oyster. Only one of them can be a satisfying meal. They are a little harder than normal oysters, but they still are very rich in taste and quite bitter.
Having them raw is highly recommended, but they are also very tasty grilled, or with some vinegar or lemon.
