"Karei" – Righteye Flounder

This fish is so popular that there is even a festival dedicated to it in the prefecture’s hot spring area.

The popular name for the righteye flounder among the locals is “Karei”. They are usually prepared by simmering in a broth or by deep-frying. These fish are so soft that the skin can fall off the bones after being cooked. When cooked, they melt in the mouth. Deep-frying them, however, create a very rich taste and allows their fins to be eaten as well.
An annual festival held at the Yuwaku Onsen hot spring area uses these fish as an offer to the gods asking for the people’s prosperity.
