"Sayori" - Japanese Halfbeak
A silver-blue colored fish commonly caught in spring.
These fish are characterized by their slender body and their protruding lower jaw which resembles a beak. The tip of their jaws are red. Their texture is very firm and their flavor is very light. They are often used in sushi dishes because of their colorful look and their unique fresh favor.
They can be caught both in spring and in autumn, but they do taste better in spring.
