"Kobako-gani" (the female snow crab)
This seasonal crab is a treasure to the locals.
Kanaiwa Kobako is the common name for female snow crabs in Kanazawa.
The most common way of preparing these crabs is by boiling them. Mixing their roe, crab butter their meat is highly recommended. Putting the crab upside down when boiling it in salty water prevents the broth and meaty taste from fading. Although they are cheaper than the male variant, they are seasonal and they cannot be sold outside of the Ishikawa Prefecture due to a shortage. Thus, these crabs can only be found in Kanazawa.
