"gori" - Fluvial Sculpin

Gori is the local name for the Japanese Fluvial Sculpin.
Although it is a rather ugly fish, it has a very sophisticated sweet taste.
They are often deep-fried or eaten raw after being rinsed in cold water. It can also be used for soups or simmered dishes.
