Jibuni
A superb local dish.
Jibuni is commonly served at traditional Japanese restaurants in Kanazawa. The recipe dates back to the feudal era of Japan. Jibu-jibu is a Japanese onomatopoeia used for simmering sounds. The Jibuni stew is usually served in a thin and wide but shallow bowl. The dish is made by simmering duck meat coated in flour and wheat gluten in fish bouillon, with the addition of shiitake mushrooms and seasonal vegetables. It can be served with a little bit of wasabi on top.
