This is one of the seafoods that can be considered as one of the delicacies representing the Ishikawa Prefecture. They can be caught during the coldest months of the year, the months that they produce the most glycogen.
The oysters sold in Kanazawa are usually caught in the northern Nanao area. They can be served raw, with vinegar, grilled, steamed or even as sushi. More western recipes, such as gratin or deep-fried can also be found around the city. They are a very popular meal in winter.
