These fresh squids arrive in the ports of Kanazawa from various fishing ports, including the ports in northern Noto, which is considered being one of the best fishing ports in Japan for squids.
These squids can be used for sashimi, tempura, grilled or boiled dishes accompanied by some Japanese radish or other local vegetables. Having them as sashimi would keep their crunchy textures. A popular dish is Teppo-yaki, where intestines of the squids are mixed with fried carrots, burdocks, shiitake mushrooms, tentacles and soybean pulps.
