A typical nare sushi recipe is Kabura-sushi, of which the main ingredient is the Japanese radish. The radish is cut into thin slices; yellowtail then put between two slices before they are turned into pickles. The radish part is crunchy and the fish is very juicy and fatty. The malted rice that accompanies it is both sweet and sour. It is popularly served as a side dish for alcoholic beverages.
