Local vegetables in Kanazawa are sold under the brand "Kaga Vegetables". Many of these vegetables are also used for making confectionery. "Satsumaimo" - Sweet Potatoes, "Utsugi Akagawa Amaguri Kabocha" - Red skinned, sweet chestnut- flavored pumpkin produced in Utsugi, "Kinjisou" - Kinjisou spinach and Kaga Renkon" - Lotus Roots, to name a few. The sweet potatoes can be combined with red bean paste to create cream puffs. The red skinned pumpkins can be used for cakes. "Kinjisou" - Kinjisou spinach can be used for making jelly and its color can be extracted to decorate cakes or pudding.
